Sushi Iwashi opens

Sushi Iwashi has opened at Monte Everest 625, in Lomas de Chapultepec: a new restaurant born from the collaboration between Grupo Hunan and Grupo Edo Kobayashi, with interior design by Cuaik | CDS.

Iwashi is the sushi house within Edo Kobayashi’s family of restaurants, a group founded on a clear principle: each place devoted to a single tradition of Japanese cooking, with the same care given to the fish as to the tableware. For this opening it joins Grupo Hunan, for whom we have designed restaurants from Mexico City to San Diego and Los Cabos.

The dining room is wrapped in warm timber panelling, crowned by a fluted cornice that carries a soft, continuous line of light. Booths in caramel leather, backed in deep blue velvet, are separated by polished steel rails and fine mesh screens: each table keeps its privacy, while the room remains one.

Art is central to the project. Works by Guatemalan artist Darío Escobar and Mexican artist Leo Marz are integrated into the interior as part of its architecture, not as decoration added afterwards, and hold a quiet dialogue with the warmth of the wood and the restraint of the room.

Underfoot, a patterned stone floor sets a steady rhythm, and the glow of a paper lantern completes an interior where light, material and art set the pace of the meal.
